I’m not a huge fan of salad. I eat it for the same reasons everyone else does … because it’s healthy and you’re supposed to. And then I learned how to make salad that actually tastes good, without all of the bad things that usually make it taste so.
Meet the best spinach salad ever. This is my go-to when I’m in a rush, and if I’m being perfectly honest, it’s a regular on my breakfast menu. Salad … for breakfast? Yes. In my house, breakfast is the most important meal and is often a “normal” meal.
This salad is perfect because it’s sweet and salty, cool, crisp, and warm, full of healthy fats, protein, and the vitamins and minerals that will fuel you through your day. It contains heart healthy hemp hearts, warm sugar snap peas, and chicken, which I batch prep at the beginning of the week for use in all sorts of recipes, like this one.
Go ahead. Try it. You won’t even miss the dressing.
- Place the sugar snap peas in 1 inch of filtered water and simmer on low on the stove until they get softer and turn bright green (about 3 minutes).
- Drain the water on the sugar snap peas (if there's any left) and add your chicken, stirring slightly to warm.
- Add spinach, sugar snap peas, and chicken to a bowl, and top with hemp seeds.
