Sugar Snap Spinach Salad

Serves: 2 Servings
  • 2 Cups of Spinach
  • ½ Cup of Seasoned Cooked Chicken (I batch prep this at the begging of each by cutting up chicken thighs in 1-inch pieces and sautéing with salt and THIS chicken grilling seasoning.)
  • 1 Handful of Sugar Snap Peas
  • 1 T Hemp Seed Hearts (I order mine here.)
  1. Place the sugar snap peas in 1 inch of filtered water and simmer on low on the stove until they get softer and turn bright green (about 3 minutes).
  2. Drain the water on the sugar snap peas (if there's any left) and add your chicken, stirring slightly to warm.
  3. Add spinach, sugar snap peas, and chicken to a bowl, and top with hemp seeds.
