Are you ready for this? Days 14, 15, 16 menu plans and recaps! I hate to do so many recaps at once but I can I only do so much writing in a day. Here’s the break-down for the last three days:
Day 14: I had a raw chocolate SunWarrior Protein Shake (and a 5.25 mile run).
Day 15: I had a banana and kombucha. Believe me, I wanted to eat more but the crazy of the morning just wouldn’t allow.
Day 16: I had a grapefruit with raw honey and raw almonds marinated sweet with vanilla beans, agave, and cinnamon. These almonds are so delicious that no one in this family could stay out of them. They disappeared almost as fast as I made them and I “hid” just enough for a picture.
Day 14: I finally found a raw pizza recipe that I love! The other day I made two red pepper pizza crusts and placed them in pie pans in the bottom of the dehydrator. Then I mixed up the sauce, which is the most delicious raw pizza sauce I have ever tried, marinated vegetables in the dehydrator for an hour, and mixed up some raw pine nut “cheese” that actually tasted like real cheese!
Seriously, this pizza was so good that I attempted to eat three pieces! I adapted this recipe from “Skinny Limits.” I added 1 tablespoon of raw agave to the sauce and doubled the crust portion of the recipe to make two pizzas (I already knew I’d love it), and added 1/3 cup of raw almonds instead of 1/3 cup of hemp seeds in one of the crusts (because I ran out of hemp). I think the almonds created more of a “flour-like” crust and gave it a sweet taste. The cheese was amazing and the author is right, letting it sit out on your counter for 2-5 days is definitely the way to go!
Day 15: For lunch on day 15 I had a leftover kale salad with tomatoes, cranberries, and pine nuts that I picked up at Whole Foods, a “peanut butter and jelly sandwich” made with leftover Raw Superfood Oatmeal Bread, almond butter, and strawberry chia jam, and a raw food brownie.
Day 16: For lunch I had leftover pizza and a raw food brownie. The pizza is actually better the second day!
Day 14: I had a raw salad inspired by The Rawtarian. I simply sliced up two large carrots, two big handfuls of sweet baby tomatoes, and squished half of an avocado on top (I really dig avocados). It was simple and surprisingly delicious. I had snacked all afternoon on almonds and oranges so a light supper felt great. I might have had a few “raw” peanut butter cookies too.
Day 15: For supper on day 15 I broke out my juicer for the first time in two weeks – which is quite surprising because it’s usually out every few days. With my Champion, I made one of my favorite green juices from “A Simply Raw Life.” This recipe almost fills a pitcher. When guests come over I add a little extra pineapple and some water to sweeten it up and fill it up. You cannot go wrong with this recipe. I snacked for the rest of the evening on raw almonds, raw tortilla chips, and oranges.
Day 16: For supper (post 5-mile run) I had a raw “Mock Tuna Salad” by Rawmazing, with oranges, almonds, and a bowl of sweet baby tomatoes.
In the dehydrator tonight I have raw buckwheat groats for donuts and am soaking raw almonds for almond milk. I can’t believe I have made it 16 days on a raw food diet! Only 24 more days left to go…and then I shall have a big bowl of roasted vegetables and a piece of fish! (I bet you thought I’d want to stuff my face with pizza huh…).
